  • Tamarind-date chutney – 4 tbsp
  • Garlic chutney – 2 tbsp
  • Green chutney – 2 tbsp
  • Pomegranate seeds – ¼ cup
  • Roasted peanuts – ¼ cup
  • Sev – ½ cup
  • Onion – 1 medium, finely chopped
  • Fresh coriander leaves – 2 tbsp, chopped
  • Lemon juice – 1 tbsp
  • Salt – 1 tsp (or to taste)
  • Water – ¼ cup (60 ml)

Steps

  1. Heat 2 tbsp oil in a pan. Add the boiled and mashed potatoes, sprinkle dabeli masala, salt, and a splash of water. Mix well and cook for 3–4 minutes until the masala blends evenly with the potatoes. Add lemon juice and half of the chopped coriander leaves. Remove from heat and let it cool.
  2. Spread a spoonful of the prepared potato mixture inside each pav bun. Drizzle tamarind-date chutney, garlic chutney, and green chutney on top.
  3. Add roasted peanuts, pomegranate seeds, a little chopped onion, and sev inside the bun over the potato filling. Press the pav lightly to hold everything together.
  4. Heat a pan or tawa, spread butter, and toast the stuffed pav on both sides until golden and crisp.
