  • Milk – ½ cup
  • Cardamom powder – ½ tsp
  • Garam masala – ½ tsp
  • Turmeric powder – ¼ tsp
  • Red chili powder – 1 tsp
  • Coriander powder – 1 tsp
  • Salt – to taste
  • Saffron strands – a few (soaked in 2 tbsp warm milk)

Steps

  1. Heat 2 tbsp ghee in a pan and sauté chopped onions until golden brown. Add ginger, garlic, and green chilies, and sauté for a minute.
  2. Add soaked cashew nuts and cook for another minute. Let the mixture cool slightly, then blend into a smooth paste with little water.
  3. Heat the remaining ghee in the same pan, add the prepared paste, and cook for 2–3 minutes. Stir in tomato puree and cook until oil separates.
  4. Add turmeric, red chili powder, coriander powder, and salt. Mix well and let the spices cook for a minute.
  5. Lower the heat and add milk, fresh cream, and saffron milk. Stir continuously to avoid curdling. Let the gravy simmer until it thickens and turns creamy.
  6. Add paneer cubes and garam masala. Gently mix and cook for 3–4 minutes on low flame.
  7. Garnish with cardamom powder and extra cream before serving hot with naan or jeera rice.
